The truth is that this chemical is created in the process of preparing food at high temperatures, no matter if we talk about baked or roasted, including potato chips. When the food is heated enough to produce a fairly dry and brown/yellow surface, this chemical is formed.

So, it is a general rule that all foods that are processed or cooked at temperatures above 100 C degrees may contain acrylamide.

So, it is a fact that potato chips are notoriously high in this dangerous chemical. So high, in fact, that in 2005 the state of California actually sued makers of potato chips for failing to warn California consumers about the health risks of acrylamide in their products.
